how do you like your eggs in the morning?


This post is going to be a bit different, I know I promised winter warmers a few months ago but with all my uni work and starting a new job I was bogged down and the last thing I wanted to do was spend hours cooking. I thought I would share a recipe that is quick and easy but full of flavour.

 This is simply crushed avocado on granary toast with a poached egg.

A little tip for poaching an egg, bring the water to the boil add a capful of vinegar then reduce the heat before adding the egg otherwise it will break up and it'll be ruined. For the avocado just scoop it out of the skin with a spoon crush it up with a fork, add lemon juice salt & pepper and some crushed chillies for a bit of a kick.
